01 · How it helps

For the moments when food needs to wait

A pantry is not only shelves of cans. It is food, water, cold storage, dry storage, and the habit of using what you keep.

  1. 1Choosing where food lives

Which spot in my house is truly the coolest?

The thermometer walk: put a thermometer in the spot you think is coolest, read it morning and evening for three days, then move it. Chapter 04

Is the basement floor a good place for my extra cans?

Cans off the floor: keep them on a shelf, away from bare concrete, where moisture can wick up into the cans and encourage rust. Chapter 02

  2. 2After a shopping trip

What do I do with a big family pack of chicken?

The freezer day: the same day, split it into meal-sized portions, label each with the month, and freeze flat so they stack like boards. Chapter 06

How do I stop old cans getting lost at the back?

New food behind old: write the month and year on each lid, put it behind the older food, and cook from the front. Chapter 09

  3. 3After a big cook

What do I do with a big pot of leftover soup?

The two roads: within two hours, some goes in the fridge for the next few days and the rest into the freezer in portions. Chapter 08

How do I keep track of what I have frozen?

The freezer list: tape a list to the door. Write each package and its month going in, and cross it off coming out. Chapter 07

  4. 4Before a storm or outage

How much water should I keep in the house?

The gallon rule: keep one gallon per person per day, choose how many days to keep, and do the arithmetic once. Chapter 10

Will my old can opener work when I really need it?

Test the can opener: open a can you were going to eat anyway this week. If it is stiff or dull, replace it now. Chapter 11

Not in this book: A claim that every steppe method belongs in an ordinary house.

I explain where a house is different, and what to do there instead.

I explain why that method depends on conditions your house does not have.

I describe the plain work of boiling water and keeping it in the pantry.

Not in this book: A pantry that can be filled once and forgotten.

I show you how to keep the store turning over.

Lessons from a life on the steppe

Batbayar Ganbold is a 76-year-old herder from Khentii province in eastern Mongolia, where winter temperatures routinely reach 40 degrees below zero.

He has spent his whole life moving with the seasons: keeping a ger warm through the steppe winter, and keeping a family fed for months without a refrigerator or electricity, the way herders always have, by drying, freezing and storing food with care and wasting nothing.

The Steppe Pantry turns those ways into a pantry plan for an ordinary home, and marks the places where a house needs a different method than a ger.
